Chicken and Noodles

It’s time for another installment in Comfort Foods 101, this week’s episode features The Chef and Friar Tyst. Friar Tyst’s specialty is fried foods, but he has learned to appreciate my specialty, comfort food. Chicken and Noodles is a true comfort food, there are many different variations of this dish, but this one has to be my favorite. The creaminess of the sauce mixed with the soft noodles and crunchy cracker topping….it’s simply too much my friends…..too much…..

The Ingredients: 4 cups water, 2 1/2 cups penne pasta, 1 10 oz. Campbell’s condensed cream of chicken soup, 1 15 oz. Healthy Choice Chicken Noodle (soup),1 1/2 cups lemon pepper shredded chicken (fully cooked), 1 cup grated cheese, 1 cup crushed Cheez-it crackers, 1 chicken bouillon, 1/2 tsp. no salt seasoning, 1 tsp. cumin, 1/2 tsp. garlic, 1/2 tsp. black pepper.

Pour the water into a large pot, bring to a boil. When the water is boiling, reduce the heat slightly and add the noodles and bouillon. Cook for 10 minutes. Drain the noodles and pour them into a baking dish. Add the shredded chicken, both of the chicken soups, and spices to the baking dish. Top with crushed crackers, then the grated cheese. Bake at 350 degrees for 20-30 minutes.
