I see that I have been neglecting the bread category as of late, but there was CHOCOLATE to be had…..I’m always looking for new bread recipes to try, and when I stumbled upon a healthy-ish recipe for cinnamon bread on Pinterest, well, I couldn’t resist! Cinnamon Applesauce Quick Bread is my own rendition of said recipe. This bread is so easy to assemble that I could hardly believe how good it turned out! I find that in the end, quick bread and regular bread are quite similar in taste, really the only difference is that quick bread is easier to make for those who are short on time.
The Ingredients: 2 1/2 cups white whole wheat flour, 2 tbsp. cinnamon, 1 tbsp. baking powder, 1/4 to 1/2 tsp. salt, 1 egg, 1 cup unsweetened applesauce, 1 cup brown sugar, 1 cup vanilla almond milk, 1-2 tbsp. grape seed or olive oil (for greasing).
Preheat your oven to 350 degrees. Sift the flour into a large mixing bowl, add cinnamon, baking powder, and salt. In a separate, small mixing bowl, whisk together applesauce, sugar, the egg, and milk. Slowly fold together the wet and dry ingredients until just combined. Grease a loaf pan with oil of choice. Pour prepared batter into the greased loaf pan and cook for an hour. If the middle is still under cooked, leave it in the oven for an additional 10 minutes.
Now, do not be afraid of the humble appearance, it tastes better than it looks!
