My family loves pasta of any kind, in fact, I’ve never served them a pasta dish they don’t like! Adding pasta to an old recipe can give it variety. Not only is Baked Vegetarian Alfredo simple and scrumptious, it provides a sneaky way to get your kids to eat their broccoli! This dish has become a old favorite in our household, as I hope it will be in yours.
The Ingredients: 1 pkg. Eat Smart Broccoli Florets, 2 cups whole wheat elbow macaroni, 1 14.5 oz. can Prego Alfredo Sauce, 2 tbsp. sour cream, 1 cup crushed oyster crackers, 4 oz. grated cheddar cheese, 1/2 tsp. cumin, 1/2 tsp. garlic powder.
Using a vegetable chopper, chop broccoli until finely minced. Pour into a large pot with the pasta and boil for 10-12 minutes. When the noodles and broccoli are ready:
Place them into a large casserole pan with the spices and cracker crumbs, stir well. Add the sour cream and Alfredo sauce, mix until combined. Top with cheese and bake in a 350 degree oven for 20 minutes. Serves 7-8.
